Easy Paleo Nut and Seed Bread/Loaf

Giving up grains is quite foreign to me. I never really associated grains to be inflammatory or contribute to my poor digestion. Whilst spending 6 weeks overseas in the UK, all I ate was gluten, lactose/dairy, spuds and more gluten, but never really felt the effects, despite being intolerant. I had probiotics with me which were prescribed by a Naturopath to help adapt to the change in food processing and help me enjoy my first time abroad without feeling too sluggish. 100% Paleo Green Smoothie

Its almost Friday (YAY) but before tomorrow comes along I have a big day in clinic following up with and seeing new clients to get through! So to keep me on my feet I’m pulling my (dusty) blender out and blitzing up a mix of goodness. This one is 100% Paleo so there is NO fruit, dairy, gluten or added sugar…. but PLENTY of healthy FAT! By eating FAT you are NOT going to get fat! Fat is needed within your diet to help regulate and balance your sex hormones (oestrogen, progesterone, testosterone), improve concentration, memory, energy, helps the body use essential vitamins, protects your organs from injury (acts as a protective cushion) and most importantly, provides the structural components of myelin, the sheath surround each nerve fibre in the brain, to deliver messages faster! Carrot and Walnut Cake

“Whats up doc” What do you do when you have way too many carrots on hand? (Besides eating them all) Make a divine loaf of bugs bunny approved carrot cake. Carrots are a great ingredient to add to your cakes, desserts, breakfast, dinner because they are one of the richest sources of Vitamin A, a fat-soluble vitamin that is great for your vision and helping to boost your immune system. It is also an antioxidant which can help protect against inflammation and oxidative stress caused by free radicals. Carrots are rich in fibre, low in calories and available all year round.  Icing- I personally don’t think icing is needed because it is already sweet enough with the medjool dates, but incase you like it the traditional way: Dairy Free Icing: whip 1 cup of coconut cream until thick, add 1 teaspoon of carrot gratings with a dash of cinnamon High protein icing:  mix 1 scoop vanilla protein powder, 1 tablespoon almond milk, ½ cup greek yoghurt, 1 tsp vanilla extract. Vegan Beetroot Dip

Spent yesterday baking ahead for afternoon tea with my baby cousin and aunty, when I came a cross a heap of organic beetroots I forgot about in my back fridge. I’ve always loved the taste of them but never found a way to make something tastier than a boring boiled beetroot and spinach salad, so I went onto pintrest and found some inspiration for this Beetroot Dip – which I made for the first time in my new Optimum 4200 blender!
